Ingredients
- 1 tbsp matcha powder
- ½ cup rolled oats or almond flour
- 2 tbsp chia seeds
- 3 pitted, medjool dates
- Pinch of salt
- 5 tbsp almond butter
- 2 tbsp coconut oil
- Dash of vanilla extract
- 300 g Dark chocolate (optional)
Preparation
- Blend the dry ingredients
Mix the matcha powder, oats, chia seeds, dates and salt in a bowl and then blend on high-speed in a food processor.
2. Add the wet ingredients
Next, add the almond butter, coconut oil and vanilla extract. Blend until thoroughly combined. The mixture should be quite thick.
3. Form into small balls
Transfer the mixture into a separate bowl and create small, around 2 tbsp, balls using your hands. Freeze for 10 minutes.
Tips
For the “matcha look” roll the balls on matcha powder until thoroughly coated. For a touch of indulgence, you can coat the energy bliss balls in chocolate instead. Melt the chocolate either in the microwave in 30 second intervals until melted or on a pan on low heat. Dip the energy balls into melted chocolate, if you would like to decorate them – I recommend sprinkling shredded coconut or chia seeds. Freeze for 15 minutes
